Lent is just around the corner for Greek Orthodox Christians. In many parts of Greece they have Apokries, the Greek version of Mardi Gras, which is a celebration to the start of lent. Apokries means goodbye to meat, at least that is the way we translate it in our family. So I thought this month I would share some recipes we like to have during the Lenten season. We like to eat a lot of legumes, fruits and vegetables. One of our favorite is Fake (lentil soup) and gigantes (fava beans). And when we are craving something sweet I like to make halva. Try this recipe during the upcoming Lenten season. Enjoy!
8oz bag of lentils
4Tablespoons Olive Oil
1 cup each of chopped onions, carrots and celery
Salt, pepper, 2 bay leaves, and a couple of crushed garlic cloves
10 cups of water
1 tablespoon of tomato paste or 2 cups fresh pureed tomatoes
At the end you can add 1/3 cup apple cider vinegar
Sauté in olive oil onions, carrots, celery, salt, pepper, bay leaves and garlic add lentils stir.
