I love summer time and all the fresh vegetables that are available at our local farmers market.
Some of my favoirtes are fresh red skin potatoes, zuccinni, eggplant, tomatoes, peppers and fresh greens. Here are a few easy recipes that I think you will enjoy this summer.
Take a few potatoes maybe 6-7 depending how many you need to feed
Wash them with skins on if you like, cut them in quarters then place on a baking sheet with edges
Drizzle good Olive Oil all over the potatoes, be generous.
Take the Greek to Go Greek Seasoing, shake well and then sprinkle all of the potatoes
Bake at 450 degrees for about an hour or until nice golden brown and tenderj
Just pick your favorite green like brocollini, dandillions, endives........
Wash well then boil for a few minutes until tendor
Place in a bowl
Drizzle wtih Olive Oil, be generous
Drizzle with Fresh Lemon Juice
Sprinkle some Greek to Go Seasoning
Toss and Enjoy!
Traditional Greek Salad
Tomatoes, cut in wedges
Fresh Shallots thinly sliced
Cucumbers, cut thin
Good Feta Cheese
Good Olive Oil
Good Greek Oregano
Just put the veggies in a bowl
Drizzel Olive Oil
Sprinkle Sea Salt
Cut a piece of feta or crumble it on top
Mix and enjoy, So Easy
Make sure to get some good bread to dip into it!!
Another Greek Summer Classic is called Tourlou-Tourlou or Briam
1 eggplant diced
2 large potatoes, peeled and quartered
2 zucchini. thiick slices
2 yellow squash, thick slices
3 onions, thick slices
2-3 red, yellow or green peppers, slivered
4-5 cloves of garlic diced
1 pound fresh tomatoe, chopped
1/2 cup fresh chopped parsley
1 cup good oilive oil
2 Tablespoons of Greek to Go Seasoing
Mix all the ingredeints togather and place in a large baking pan or casserole
cover and bake at 400 degrees for 45 minutes to hour
